Often, ovens in your home are not correctly calibrated to your
dial. Either it was never calibrated properly upon manufacture. Or, your oven
needs periodic calibration. Either, to cook properly, you need to know the
internal temperature of your oven and be able to set it properly. According to
tests conducted by Cook's Illustrated, two ovens set to the same temperature
can actually differ by as much as 90 degrees. Poor calibration, temperature
cycles and hot spots can significantly affect your recipe. To avoid this, gauge
your oven’s temperature with an oven thermometer. In addition, use a
thermometer to see the oven is pre-heated enough.
Make sure to choose a thermometer that’s easy to read and
sturdy.
