Using an Instant Read Thermometer

Food Spoilage is the #1 enemy of the food service industries. In order to minimize the growth of bacteria in liquids such as stocks or soups, an instant read thermometer is used to make sure that the liquids that are to be cooled are doing so quickly enough. Large pots of soup can spoil as they cool down. The instant read thermometer gauges the rate of cooling to avoid spoilage that denigrates the taste of the liquid and could even cause illness.

Instant read thermometers are also used to get an instant reading on the temperature of hot buffet foods

As with all thermometers, make sure that the instrument is probing the liquid being checked. Do not touch the probe to the hot pot as this will produce a misreading of the temperature.
